Shakshuka

Shakshuka is the perfect meal any time of the day, breakfast, lunch or dinner, it doesn’t matter, it is that good. This recipe is easy to scale up to feed many or scale down to a single size portion. I love making the tomato base in large batches, keeping it in my fridge, then heating up with eggs, merguez, & any leftovers!

Dry Goods

¼ Cup Neutral Oil
1 Tablespoon Sweet Smoked Paprika
2 Teaspoon Cumin Seed, ground
2 Teaspoon Coriander Seed, ground
1 Tablespoon Preserved Lemon
1 Tablespoon Harissa
12 Oz Diced San Marzano Tomatoes in Juice
¼ Cup Extra Virgin Olive Oil
4 Teaspoon Kosher Salt


Shakshuka Cook

Ingredients

¼ Cup Of Neutral Oil
4 Each Garlic Clove, sliced thin
12 Oz Spanish Onion Small Diced
12 Oz Red Bell Pepper Small Diced
1 Tablespoon Sweet Smoked Paprika
2 Teaspoon Cumin Seed, ground
2 Teaspoon Coriander Seed, ground
1 Tablespoon Preserved Lemon
1 Tablespoon Harissa
12 Oz Diced San Marzano Tomatoes in Juice
2-4 Vol Oz Water 
4 Each Whole Eggs
½ Each Long Hot Pepper Shaved Thin
¼ Cup Of Extra Virgin Olive Oil
4 Teaspoon Kosher Salt (more or less to your taste)
6 Sprigs of Cilantro

Make it Vegan: 1 (16 oz) package of Silken Tofu.

Method
  1. Heat 1/4 cup of canola oil over medium in a skillet large enough to accommodate 4 poached eggs. Add the onions, bell peppers, garlic, preserved lemon, harissa, paprika, cumin, coriander, half of the salt, & cook, stirring occasionally, until the vegetables have softened, about 10 minutes.
  2. Add the chopped tomatoes with juice & simmer until reduced by about one-third, 10 to 12 minutes.
  3. Whisk in the 1/4 cup extra virgin olive oil.
  4. Crack the eggs into the skillet, spacing them evenly in the sauce. Lower the heat, cover, & cook until the egg whites are set but the yolks remain runny for about 5 minutes.
  5. Top with long hot chiles, & cilantro.

Serve immediately right from the pan with your favorite bread to dip in!
