Produce

2 1/2 Lbs Carrots
1/2 Each Lemon, zest & juice
1/4 Each Garlic Clove

Dry Goods

1 Oz Berbere Spice
To Taste Salt, Kosher
1 Oz Neutral Oil

Dairy

16 Oz Yogurt, 5% full fat

Other

3-6 Oz Hummus


Berbere Roasted Carrots

Ingredients

2 1/2 Lbs Carrots
1 Oz Berbere Spice
To Taste Salt, Kosher
1 Oz Neutral Oil

Method
  1. Preheat your oven to 425 degrees F.
  2. Wash carrots very well, don’t peel unless necessary.
  3. Cut into large bite sized pieces.
  4. Toss carrots in oil.
  5. Season with salt, & berbere spice.
  6. Place seasoned carrots on a roasting pan lined with parchment paper.
  7. Place into the oven & cook carrots until fork tender (about 10-15 minutes).

Garlic Yogurt

Ingredients

16 Oz Yogurt, 5% full fat
1/2 Each Lemon, zest & juice
1/4 Each Garlic Clove
As Needed Kosher Salt

Method
  1. In a bowl, add yogurt, lemon zest, juice, & grated garlic clove.
  2. Season with salt to your liking & store in the fridge up to 5 days.

Plating

Ingredients

3 Oz Hummus
1 1/2 Cup Roasted Berbere Carrots (above)
1 Oz Garlic Yogurt

Method
  1. On a plate, add a thin layer of hummus.
  2. Evenly spread roasted carrots on top.
  3. Garnish with a dollop of garlic yogurt & berbere spice.
  4. Enjoy!
