Chicken Schnitzel & Chipotle Brussels Sprout Salad

Special Equipment: Microplane, Plastic Wrap, Mallet, Whisk, Cast Iron, Knife, Mandolin

This dish came to be in a quick fire challenge at home. It was so good that I just had to make again & again. Simple & delicious

Shopping List

Produce

4 Cup Brussels Sprouts
1 Bunch Cilantro
1 Each Garlic Clove
1 Each Lemon

Meat

1½ Lbs Chicken Breast

Dry Goods

1½ Cup Mayonnaise
2 Teaspoon Chipotles
1½ Cup All-Purpose Flour
4 Cup Panko
Kosher Salt
Black Pepper
3 Cup Neutral Oil

Other

2 Each Whole Eggs


Chipotle Brussels Sprout Salad

Ingredients

4 Cup | 300g Brussels Sprouts (clean & shredded)
1 Cup | 15g Cilantro
1½ Cup | 200g Mayonnaise
2 Teaspoon | 12g Chipotle liquid
1 Each | 7g Garlic Clove
¼ Cup | 30g Lemon Juice
To Taste Kosher Salt

Method
  1. In a bowl, add mayonnaise, lemon juice, grated garlic, chipotle, & salt
  2. Adjust seasoning & set aside
  3. In another bowl, add thinly shredded brussels sprouts, & chopped herbs
  4. Mix in Chipotle to your liking (use more or less depending on your spice tolerance)
  5. Add additional seasoning if needed

Chicken Schnitzel Breading

Ingredients

2 Each | 1½ Lb Chicken Breast
1½ Cup | 150g All-Purpose Flour
2 Each | 100g Whole Eggs
4 Cup | 300g Panko
To Taste Kosher Salt
To Taste Black Pepper (fresh ground)
As Needed Neutral Oil

Method
  1. Rinse & trim any fat off chicken breast
  2. Slice chicken breasts horizontally to ¼ inch thick
  3. Lay out plastic wrap on the prep table
  4. Evenly spread out slices of chicken breast giving room to spread outward
  5. Apply another layer of plastic wrap on top of the chicken breasts
  6. Using a meat tenderizer / mallet, pound chicken to ¼ inch thick
  7. Take off plastic wrap & season with salt, & pepper
  8. In a bowl crack & whisk eggs. In another bowl, add flour, & another bowl add panko breadcrumbs
  9. Place a piece of sliced chicken into flour until completely coated, & shake off flour
  10. Place chicken into whisked eggs & coat
  11. Pull Chicken out & allow any access egg to fall back into the bowl
  12. After a few wrist shakes, place chicken into the panko bowl to surround & coat chicken with the panko
  13. Place chicken on a pan or tray that is lined with paper for easy clean up

Cooking the Schnitzel

  1. Add enough oil to cover the bottom of you pan & bring to a medium heat
  2. Once the oil becomes shimmery, add in 1-2 cutlets and allow to cook until golden brown
  3. Flip to cook the other side until golden & crispy
  4. Add on top of your brussels sprout salad, squeeze lemon & enjoy!
