As seen on Top Chef All-Stars Season 17
Do you remember when my sister Jessica joined me on Top Chef All-Stars? Together we had to create a condiment that represented us. So we chose to make a sauce & marinade named after our other sister Sunny. A combination of Lemon, Ginger, Turmeric, Honey, Love & Sunshine! Sadly, this wasn’t the judge’s favorite, but I want you to join to be the judge of that!
Special Equipment: Scale, Microplane, Chef Knife, Bowl
Serves: 2-4
Level : 1 (easy)
Ingredients
Sunny Love Sauce
Yield: 15 Oz | 430 g
- 2pc | 22g Preserved lemon
- 1 Tablespoon | 15g Ginger, fresh
- 1/2 Teaspoon | 2g Turmeric, fresh
- 2-3 each | 10g Lemon Zest
- 2-3 ea | 109g Lemon Juice
- 1/2C | 120g Water
- 2 Tablespoons |36g Honey
- 1/4 C | 50g Neutral oil
- Yogurt (Optional)
S.G.L.L Sauce can be used as is in a Vinaigrette , Marinade proteins, (such as lamb, steak, & chicken). Great with Ceviches, & other seafood. Or you could ad to yogurt to give a nice tang, & brightness
Method:
SGLL Sauce
- Rinse preserved lemons with warm water
- Brunoise the preserved lemon & add to a bowl
- Using a microplane, grate lemon zest, turmeric, & ginger directly into a bowl
- Add remaining ingredients (lemon juice, honey, water, & oil)
- Now you can use as is in a Vinaigrette , Marinade proteins, (such as lamb, steak, & chicken). Great with Ceviches, & other seafood. Or you could ad to yogurt to give a nice tang, & brightness
